A quick, colourful, high-protein meal using a ready-made mixed stir-fry vegetable bag.
Ingredients
- 1 bag (approximately 400g) mixed stir-fry vegetables of your choice
- 200g firm tofu, chicken, prawns or lean beef, sliced
- 1 tbsp olive or sesame oil
- 2 cloves garlic, crushed
- 1 tsp grated fresh ginger (optional)
- 150g wholewheat noodles or brown rice
Stir-Fry Sauce
- 2 tbsp reduced-salt soy sauce or tamari
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp honey (optional)
- Chilli flakes to taste (optional)
To Serve
- 1 tbsp mixed seeds (sesame, pumpkin or hemp)
- Spring onions or fresh coriander
- Lime wedges
Method
- Cook the noodles or brown rice according to the packet instructions.
- Heat the oil in a large frying pan or wok.
- Cook your chosen protein until browned and cooked through.
- Add the garlic and ginger and cook for 30 seconds.
- Add the mixed stir-fry vegetable bag and stir-fry for 4–6 minutes until the vegetables are just tender but still crisp.
- Stir in the sauce and cook for another minute.
- Serve with the noodles or rice and finish with mixed seeds, fresh herbs and a squeeze of lime.
